Classic Peanut Butter Cookies

1/2 Cup butter, softened
1/2 Cup peanut butter
1/2 Cup granulated sugar
1/2 Cup packed brown sugar or 1/4 Cup honey
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1 egg
1 teaspoon vanilla
1 1/4 Cups plain(all purpose) flour

Preheat oven to 375*F.  In a medium size mixing bowl beat butter and peanut butter on medium to high for  30 seconds.  Add both sugars, the baking soda and baking powder to mix and beat in egg and vanilla until well mixed, make sure you scrape the sides of the bowl every now and then beat as much of the flour in as you can with the mixer then stir in the rest.  Now start shaping your dough into about 1" balls and placing them 1 1/2" -2" apart on ungreased cookie sheets. Take a fork and squish the balls slightly to make the criss cross on top the cookies.*  Bake for 7-9 minutes maybe a little less or a little longer, just keep an eye on them because some days they do cook quicker than others.

*If you will keep a glass of water beside your cookies and dip your fork every now and then it will keep them from sticking to the cookie dough.
