Mamaw Hunt's Carrot Cake

I dearly love this cake!  She made it for my birthday every year.  I'm not much of a sweet eater, but I love to make them and I am so happy to have been given her recipe for this cake!

4 eggs
1 1/4 cup vegetable oil
2 cups white sugar
2 tsp vanilla
2 cups plain flour
2 tsp baking powder
2 tsp baking soda
1/2 tsp salt 
2 tsp cinnamon
1/4 tsp nutmeg
3 cups lightly packed finely grated carrots
2/3 cup chopped pcans


Cream Cheese Frosting
1- 8 oz pkg. cream cheese
1/2 cup melted butter or margarine
1 tsp vanilla
4 cups powered sugar

Preheat oven to 350*.  Spray or grease and flour 2 nine inch cake pans.  In a mixing bowl stir together flour, baking powder, baking soda, salt, cinnamon and nutmeg.  Use a large mixing bowl and with a mixer combine vegetable oil, eggs, sugar and vanilla.  Slowly mix dry ingredients and mix until well blended.   Stir in grated carrots.  Pour into round pans and bake for 35-40 minutes.  When done, remove from oven, allow cakes to cool 5 minutes in  their pans. Let cool on wire rack until comletely cooled then frost wth Cream Cheese Frosting.
